Biologist specializes on olive oil biochemistry Baccouri is an associate professor in biochemistry at the institute of medical technologies of Tunis and researcher at the laboratory of genetics, immunology and human pathologies department of El Manar university. Actively involved in the production of hight quality extra virgin olive oil in her country .She is an international consultant in olive oil quality and industry, olive oil expert and international judge in many important olive oil competitions.
