Bio

Professional olive oil taster, Roux graduated from the International Olive Council in 1999. She calls herself an elaiologist, expert in olive oil from tree to the plate and a “nose” in olive oils like the oenologists in the wine world. Her in-depth knowledge of the terroirs, standards, and regulations, and her keen olfactory memory, have been developed after 2,500 olive oil tests in more than twenty years of professional tastings. Roux is a jury member in majors national and international competitions.
